Cooking With Teresa: Vegan Pancakes
As many as you know, or may know, or are completely new to this page, my daughter has a milk and egg allergy.
Meaning that the best things in life are definitely not free, or at least not easily accessible. I have scoured the world of Pinterest in search of a good, easy, pancake recipe that my whole family can enjoy. After looking at a few they all seem to be about the same ingredients:
1 Cup of Flour
1 Tablespoon of Baking Powder
2 Tablespoons of Sugar
Pinch of salt
1 Cup of Almond Milk
1 Teaspoon of Vanilla
Mix the dry ingredients, then add in the wet ingredients
Then cook on medium/low heat until the bubbles come through
Flip pancake and cook for another minute or two until done
Now for my train wreck
First off here’s my ingredients that I use:
1 cup of Flour
2 Tablespoons of Baking Powder (I now see that one tablespoon is sufficient, but I didn’t realize my mistake in the video)
1/4 Cup of Sugar (Because this sweetness needs a little more)
Pinch of Salt
1 Cup of Almond Milk
And whatever you pour into your bowl that looks like a teaspoon of vanilla
Also sometimes I add cinnamon because I feel like it
Does this sound off the wall? That’s because it is. However this recipe normally works for us. It works because when I’m not filming everything usually goes smoother and the pancakes look good.
Of course I tried to film the creation for you.
And of course my true hot mess self came out.
But maybe….just maybe, you can take some direction from this video and be able to make it into something that I tried to create for you.
They are not pretty and I’m sorry for that. they don’t look like your typical pancakes, but again this didn’t turn out the way I had hoped. This is real life and I want to show you that normal people can put out a crappy looking recipes. At least that’s what I’m telling myself as I upload this post and video.
I’m a normal person who sometimes makes crappy pancakes.
I swear I don’t do this on purpose, but I’m human and things happen. Yes, I could have started all over and filmed a flawless video like most normal, successful, people do, but alas I’m not normal and not really sure about the successful part, but I’m trying. One of these days I’m going to make a solid cooking video where the food and instructions come out perfectly.
But not today.
